1 - ABOUT THE RECIPE

This is a wonderful weight loss dinner – combining super healthy high quality protein and veggies for energy and wellbeing, focusing on healthy carbohydrates derived from vegetables and nuts. It has a high fullness factor, meaning it reduces cravings and keep you full longer.
Our caramelized duck and kale recipe combines high quality protein and veggies. The rich and savory flavors of duck pairs wonderfully with the earthy and nutritious taste of the slightly bitter flavor of the kale, making for a well-balanced and satisfying meal. It provides super healthy carbohydrates derived from vegetables and nuts and with a a high fullness factor, it will keep your cravings at bay. I
To make the dish, you will need a few key ingredients including duck breasts, kale, garlic, red pepper flakes, salt, and pepper. You may also want to add some additional seasonings or garnishes such as soy sauce, sesame seeds, or chopped scallions.

3 - Ingredients
 
 

  •  
    80 gram Duck - cooked, from leftovers or precooked
  •  
    10 gram Onion - (minced)
  • Chard30 gram Chard
  •  
    10 gram Adzuki Beans - (cooked or canned)
  •  
    1 tbsp Walnut
  •  
    10 gram Corn - yellow
  •  
    12 gram Mushrooms - about three small mushrooms, sliced
  •  
    1 tbsp Olive Oil - (or prefered cooking oil)
  •  
    1 tbsp Coconut Sugar - or brown sugar
  •  
    1 tsp Paprika
  •  
    1 tsp Herbs de Provence
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

4 - HOW TO MAKE
 

  • Chop Chard, mushrooms and onions
  • Add Olive oil to pan, add coconut sugar, paprika and herbs of the provence. Stir for a few seconds. Add onions, saute for 3 minutes, cook until Onions are caramelized
  • Add chopped chard, cooked duck, mushrooms, corn and cooked beans to pan, stir for a another few minutes but don't over cook
  • Add all ingredients to a bowl and mix, blend in remaining ingredients
  • Pour over Balsamic-Dijon Dressing (see link below), Mix thoroughly and enjoy
