1 - ABOUT THE RECIPE

Our Avocado kimchi kale cracker stacks offer a tantalizing blend of flavors and a plethora of health benefits. Avocado contributes healthy fats, primarily monounsaturated fats, which support heart health and aid in nutrient absorption. Kimchi, a fermented powerhouse, enhances gut health with probiotics while providing essential vitamins like C and K. Kale, rich in fiber, vitamins A, C, and K, along with minerals like calcium and iron, promotes bone strength and immune function. 

2 - MISE EN PLACE

3 - Ingredients
  

  • 100 gram Avocado - ripe, about 1/2 medium avocado, peeled and pitted
  • 50 gram Red Onion - peeled and minzed
  • 1 Lemon - juice from one lemon
  • 20 gram Kale - about three leaves
  • 6 Crackers - gluten free if desired
  • 1 tsp Flax seed oil
  • 3 Black Olives
  • 0.25 tsp Chili Flakes
  • 2 tbsp Kimchi

Total Time 10 minutes

4 - HOW TO MAKE
 

  • Peel Avocado and deseed, smash with a fork
  • Finely chop onions and Kale, add to chunky Avocado pure
  • Mash all ingredients together but olives, add pepper and salt to taste and add lemon juice
  • To make a stack: Arrange one cracker on a plate, top with avocado mixture, finish off with another cracker, add a tiny amount of avocado mixture again and top with bacon bits and an olive slice
  • Continue until all ingredients are used Sprinkle plate with chili flakes if desired, serve immediately. For a non vegan version, crackers can be topped with bacon bits
