1 - ABOUT THE RECIPE

Our vegan acorn bowl is an exquisite culinary journey that tantalizes the taste buds while nourishing the body. The earthy sweetness of acorn squash pairs harmoniously with the nutty richness of black beans and the protein-packed quinoa, creating a hearty base.
Kale, a nutritional powerhouse, adds vibrant color and a boost of vitamins A, K, and C, along with essential minerals like calcium and iron. 3 - Ingredients
  

  • 70 gram Acorn squash - (about 1/2 acorn squash)
  • 0.5 Onions, red - (about 1/2 small onion)
  • 1 tbsp Black Beans - (cooked from dried or canned)
  • 1/2 cup Quinoa - cooked
  • 20 gram Kale - (cut in small chunks)
  • 1 Lemon - (lemon juice)
  • 5 gram Pomegranate seeds
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Olive oil
  • 2 cloves Garlic
  • 0.5 Tomato - chopped
  • 10 gram Iceberg lettuce - such as iceberg, chopped (about two leafes)
  • 1 tbsp Pumpkin seeds
  • 0.5 Bell pepper - chopped
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

4 - HOW TO MAKE
 

  • Cut acorn in half, place both parts face up in oven and bake at375 F (190 C) for about 30 minutes (ovens vary, check once in a while to prevent burning)
  • Let cool off for about 15 minutes, remove from oven and carve out acorn flesh once cooled down, leave about 1/2 inch of acorn flesh in the shells, set shells aside
  • For the dressing, add carved out Acorn flesh, lemon juice, crushed Garlic, Vinegar, Pumpkin Oil and chopped chilis to a bowl and mix until a creamy, add Additional Lemon juice if too thick, set aside to settle
  • Fill carved out acorn shells with cooked quinoa, black Beans, Kale, pumpkin seeds and pomegranate seeds
  • Once ready to serve, pour over dressing and serve in the acorn halves. Add Salt, pepper and herbs to your liking.
